Butchery for Cooks is an intensive course covering the fundamentals of whole animal butchery, as well as the post-fabrication utilization. This course covers the basics of meat fabrication – everything from safety and equipment to processing and cooking. Begin each class with a lecture followed by hands-on breakdown of various proteins. Then join the chefs in the kitchen learning the best methods for cooking and processing.

Our Butchery course offers more than just fabrication – take your knowledge to the next level in understanding the cuts you produce and how different cooking methods affect the proteins. This course is unique and offers a more detailed understanding of how to maximize the usage of proteins in a true nose-to-tail style.

What to Expect: Hands-On

Get ready for an in-depth culinary exploration. All hands on deck…you’ll help prepare the meal you eat.

Your class will be fun and informative, with an in-depth and hands-on view of the subject matter at hand. Arrive on time and wear comfortable shoes: you’ll be on your feet much of the night. Please come prepared to enjoy a meal at the end of the class. We’ll serve a charcuterie platter with house-baked bread and a welcome cocktail at the start of class.

Refund/Cancellation Policy

Single-Evening Class

If you are unable to attend a class, you must cancel at least five days in advance to receive a refund, retain a credit, or transfer to another class. Without the five-day notice, the registration fee is non-refundable. You may, however, send someone to class in your place. Please notify Cook Street of your substitution by calling 303-308-9300.

Classic Techniques Series Classes

In order to cancel or transfer from a classic techniques series course you must notify us at least five days prior to the start date of the first class in order to receive a full refund. Without a five-day notice the registration fee is non-refundable. If you miss a class due to unforeseen circumstances, Cook Street will only allow for one make-up class.

Age Requirements

Due to the nature of our kitchens and that cooking is an inherently dangerous activity, Cook Street asks that all participants be over the age of 18.  This is for your own peace of mind as well as for the comfort of our other guests.  The exception to this policy is any of our Kids Class series, which are all-ages.  Wine, Beer, and Cocktail classes require that participants are over the age of 21.
